Dedicated Dad, classical Chef turned Baker Francisco Parody-Candea trained in the traditional French style and has been mixing it up with Spanish flavours and local ingredients ever since.
Following a career cooking in restaurants and hotels across Europe, Fran finally came to rest in the Bude area 6 years ago and is now partner of local artisan food company Made with Love. Francisco – known as Fran (or Paco!) – is responsible for quality, product development and production of handmade gourmet pies, pasties, cakes and patisserie but especially loves outside catering and devising pop-up restaurant menus.
Hailing from the depth of Spain – La Linea de la Concepcion (“The Line” with Gibraltar) and despite moving to the UK aged 5, Fran loves all things Spanish, especially the vibrant robust flavours of traditional Spanish cuisine and how well Cornish ingredients sing in the dishes of his homeland.
Passionate about local produce, training and education, investing in people and the Bude for Food Initiative, Fran will open the festival stage with an affordable food demonstration with students from Bude Haven School. Learn how to make a proper Paella and a fantastic Fideuà and see how simple these classic dishes can be – and add them to your repertoire of fast, flavour-filled, every-day meals.
